Easy Banana Bread Recipe


Ingredients
* 2 eggs
* 1 - 3/4 cups all purpose flour
* 2 teaspoons baking powder
* 1/4 teaspoon baking soda
* 1/2 teaspoon salt
* 1/3 cup vegetable oil
* 2/3 cup sugar
* 3 bananas, mashed (about 1 cup)
* 1 teaspoon vanilla extract

Directions
1. Preheat the oven to 350 degrees F.
2. Beat eggs well in a small bowl.
3. In another bowl, sift together the flour, baking powder, baking soda, and salt.
4. In a third bowl combine the vegetable oil and sugar adding the sugar a little at a time while beating. Continue beating until the mixture is fluffy.
5. Add the eggs and vanilla to the oil/sugar mixture and beat well.
6. Add some of the flour mixture and beat well. Then add some of the mashed bananas and beat some more. Continue adding flour, then bananas until everything is mixed in.
7. Pour mixture into a loaf pan. Bake for 60-70 minutes or until a toothpick inserted in top comes out clean.
8. Remove banana bread from the pan and let it cool for 15 minutes before slicing.
