Easy Cherry Cake Recipe
This recipe is easy to make since it uses mostly pre-packaged ingredients. If you can follow the package directions you should be able to make this cake.
Ingredients* 1 two layer Lemon cake mix
* 1 cup Confectioner's sugar
* 8 oz Cream cheese, softened
* 9 oz Cool whip whipped topping
* 1 small package vanilla pudding mix
* 1 teaspoon vanilla extract
* Milk (if needed)
* 1 cup Cherry pie filling
* 1 cup cherries (fresh or bottled)
Directions
1. Mix and bake lemon cake according to package directions. Sit aside to cool completely.
2. Mix confectioner's sugar, cream cheese and 3 tablespoons of Cool Whip whipped topping. Blend well.
3. Spread half the mixture on bottom layer. Spread one half of the cherry pie filling over the bottom layer.
4. Place top layer on top of bottom layer and secure with toothpicks, if necessary.
5. Spread remaining cherry pie filling over top of cake.
6. Blend the vanilla pudding mix with the remaining Cool Whip topping and vanila extract. Add a little milk if it is too stiff. Frost sides of cake with pudding mix.
7. Spread cherries over top of cake.
