Pesto Recipe
Our recipe for Pesto uses a food processor (or blender) but the traditional way of making pesto is with a mortar and pestle. If you want to use the old tried and true method, go right ahead, however the processor does a pretty good job with a lot less effort.
Ingredients* 3 cloves garlic, chopped
* 2 cups fresh basil leaves, stems removed, washed and dried
* 3 tablespoons pine nuts
* 1 dash salt and pepper
* 1/2 cup extra virgin olive oil
* 1/2 cup grated Parmesan cheese
Directions
1. Add the garlic to the food processor and pulse to mince the garlic.
2. Add the basil leaves, pine nuts, and a dash of salt and pepper to the processor.
3. While the processor is running, slowly drizzle in olive oil through the feed tube until all the ingredients are pureed.
4. Stop the processor if needed and scrape down the sides with a rubber spatula.
5. Add the Parmesan cheese and mix well.
Note: Add a tablespoon of water and mix again if pesto is too thick.
Cover and refrigerate until ready to use.
