Easy Fish Chowder Recipe


Ingredients:
* 2 lb.cod or haddock (or use your favorite)
* 1 small onion, cut into quarters
* 1 cup sliced potatoes
* 1/2 cup canned, stewed tomatoes with juice
* 1-1/2 teaspoons salt
* 1/8 teaspoon pepper
* 2 Tablespoons butter
* 1-1/2 cups milk

Directions:
1. Remove the fish skin and cut fish into small pieces.
2. Make fish stock by simmering the head, bones, and skin of the fish with the onion in 2 cups water for 1/2 hour (add water as needed to maintain about 2 cups liquid).
Note: You may substitute 2 cups of any fish or chicken broth or stock for this step.
3. Strain the stock mixture (from step 2).
4. Pour the stock into a large soup pot and add the fish, potatoes, tomatoes, salt, and pepper.
4. Simmer together until the potatoes are soft.
5. Add the butter and milk and cook another 10 minutes.
Serve with crackers.
