Easy Baked Halibut Recipe



Ingredients
* 2 slices bacon
* 1 tablespoon all purpose flour
* 1/2 cup water
* 2 cups canned, diced tomatoes with juice
* 1/4 cup onions, diced
* 1 bay leaf
* 1 teaspoon salt
* 1/8 teaspoon pepper
* 2 lb. halibut steak

Directions
1. Preheat oven to 350 degrees F.
2. In a skillet fry the bacon. Remove bacon (give it to the dog).
3. Add flour to the bacon grease and stir constantly until dissolved and a paste forms (roux). Set aside, but keep warm.
4. In a sauce pan over medium heat, combine the water, tomatoes, onion, bay leaf, salt and pepper. Bring to a boil.
5. Slowly stir in the bacon grease/flour mix (roux from step 3) and continue cooking until mixture thickens slightly.
6. Remove bay leaf and pour sauce over the halibut in a baking dish.
7. Bake in preheated oven about 45 minutes or until fish flakes when prodded with a fork.
Serve immediately.
