Lobster Newburg Recipe


Ingredients:
* 2 Tablespoons butter
* 1 Tablespoon flour
* 2 cups lobster, cut into large chumks
* 1/2 teaspoon salt
* dash of Cayenne pepper
* 1/2 cup milk
* 1/2 cup half and half cream
* 1 teaspoon vinegar
* 1 Tablespoon lemon juice
* 2 egg yolks

Directions:
1. Melt the butter in a saucepan, add the flour and stir until dissolved.
2. Add the lobster meat, salt, cayenne pepper, milk, and cream. Bring to a slow simmer.
3. Add the vinegar and lemon juice. Stir well.
4. Beat the egg yolks and stir them into the cooked mixture very slowly, stirring constantly.
5. When the sauce has thickened, remove from heat and serve over toast.
Note: The eggs must be added slowly in step 4 and stirred constantly to prevent curdling.
