Fish and Seafood Cooking Tips

Cooking Time:
Although not a hard and fast rule, the following will generally work for grilling, broiling, steaming, poaching and sautéing fish. Measure the fish at its thickest point and cook 10 minutes per inch at 400 degrees F. For a one inch fish, cook 5 minutes on one side, then turn fish over and cook 5 minutes on the other side for a total of 10 minutes. The fish should flake when prodded with a fork. You can use an instant read thermometer and cook to an internal temperature of 145 degrees F. Using foil or sauces may require a longer cooking time.

All-Purpose Lemon Cream Fish Sauce Recipe
Ingredients:
* 2 Tablespoons butter
* 2 Tablespoons flour
* 1 cup cream (milk may be substituted)
* Salt and pepper to taste
* Juice of 1 lemon

Directions
1. Melt the butter in a saucepan, stir in the flour and stir until well mixed.
2. Add the thin cream and bring to a boil, stirring constantly.
3. When desired thickness is obtained, remove from heat, add the lemon juice and season with salt and pepper to taste.
