Baked Tilapia Recipe


Ingredients:
* 6 tilapia fillets
* 1/4 cup extra virgin olive oil
* 4 sprigs fresh thyme (use 1 tablespoon dried if fresh unavailable)
* 3 tomatoes, peeled, seeded and chopped
* 1/2 cup coarsely chopped green olives
* 1/4 teaspoon dried hot red pepper flakes
* 2 garlic cloves, minced
* 1/2 cup finely chopped onion (preferable red onion)
* 1 tablespoon fresh lime juice

Directions:
1. Preheat oven to 400 degrees F.
2. In a bowl, stir together the oil, thyme, tomatoes, olives, onion, red pepper, garlic and lime juice.
3. Place the fillets in a greased baking dish, skin side down, season with salt and spoon the tomato mixture over them.
4. Bake, uncovered, 15 to 20 minutes or until fish just flakes when prodded with a fork.
