Cheesy QuesadillasRecipe
Ingredients
* 1/4-lb cream cheese
* 1/3-cup medium salsa (your favorite store-bought)
* 6- ten inch flour tortillas
* 1-tomato, seeded and chopped
* 1/2-green bell pepper, seeded and chopped
* 1 1/2-cups shredded Monterey Jack cheese
* 1 jalapeno pepper, chopped fine (optional)
Directions
1. Combine cream cheese and salsa until well mixed.
2. Arrange tortillas in a single layer on a flat surface
3. Spread cream cheese evenly over half of each tortilla, leaving 1/2 inch border
4. Sprinkle tomato, bell pepper, and cheese evenly over cream cheese mixture.
5. Fold tortillas in half (into a semi-circle) to enclose cream cheese and press edges gently to seal.
6. Place tortillas on baking sheets and bake in 450* oven for 10-15 minutes, until golden and cheese has melted.
7. Allow to cool for 10 minutes before cutting each tortilla into 4 wedges.
8. Garnish tops with chopped jalapeno pepper, if desired.
